HOW IT ALL STARTED
John, an engineer and sandwich enthusiast, spent 29 years as a loyal Armadillo Willy’s customer. When his favorite spot closed, he didn’t just miss the brisket-- he bought the business to keep the flavour alive.

But John didn’t stop there. On a mission to bring something truly unique to Silicon Valley, he toured the country to taste the best New York–style deli classics, from Katz’s in New York to legendary spots in LA and beyond. His goal? To perfect recipes for pastrami, Reubens, and corned beef that could stand up to the bold Texas barbecue classics he already loved.
Today, Empire Armadillo blends slow-smoked Texas BBQ with stacked New York deli favorites, creating a one-of-a-kind menu you won’t find anywhere else in the Valley.
